Falmouth Oyster Festival is on this week 9th-12th October. The festival celebrates the start of the oyster dredging season. Cornwall boasts one of the last remaining traditional oyster fisheries and you can see the the whole process on one of Koru’s Kayak Adventures!
Koru’s Frenchman’s Creek Kayak Adventure takes you past the breeding beds for where the seeds are carefully developed using water movement, before being places towards the mouth of the Helford River to grow further.
The oyster cages are brought back down towards the creeks where their shells harden up with the tidal exposure to the air. The cages are then emptied into this area where the dredging takes place. This whole process take 18months to 2 years! Mooring up on the secluded beaches as the tide goes out we see oysters that have made their way to the shore and so you can pick up the oysters and our guide will explain more about them.
